Pâté-Croûte
The charcuterie craftsmanship of Pâté-Croûte, a baked pâté, has its world championship in Lyon. Our Victor Magdeburg participated in the competition, with Johan Ståhl supporting him. It is a prestigious competition organized by Bocuse d’Or and serves as a major gastronomic institution. On Monday, September 16th, at the Restaurant Academy, the decision was made as to who would represent Sweden in the World Championship. The jury, comprised of prominent figures in the restaurant world, included Tommy Myllymäki, President of Bocuse d’Or Sweden, Christophe Marguin, President of Les Toques Blanches Lyonnaises, Malidza Larsson, winner of the Swedish Championship in Pâté-Croûte 2023, Louis Dupuy Roudel of Restaurant Persona, Prix Taittinger 2024, Damien Foschetti of Fosch Artisan, master baker and pastry chef, Malin Söderström of the Moderna Museum, and Andreas Larsson, Best Sommelier of the World 2007. Unfortunately, Victor did not secure the ticket to Lyon in France, but he achieved an honorable second place, and we at Jolie are very proud of him. Congratulations!

MLLE. COSMO
In collaboration with Absolut Vodka, several bars within the Stureplansgruppen have created their own interpretations of the classic Cosmopolitan cocktail. Our bar team at Chez Jolie is participating in the competition, led by Diego Pommier.
What is a Cosmopolitan?
Often called a “cosmo,” it is a delicious cocktail made with Cointreau, vodka, cranberry juice, and lime juice. Belonging to the sour family, it has a fascinating history. Some trace its origins back to the 1920s, but most agree that the version we know today was created by bartenders in the USA during the 1980s. The drink’s popularity soared in the 1990s, largely thanks to Carrie Bradshaw in “Sex and the City.” When Madonna sipped a Cosmo at the Rainbow Room in 1996, the drink became even more iconic. The combination of TV glamour and celebrity allure made the Cosmopolitan an indispensable star in the cocktail world.
You need:
40ml Absolut Elyx
15ml Yuzy triple sec
25ml Super lime juice
25ml Rhubarb/cranberry/tonka juice
Instructions: Mix everything in a shaker, shake with ice, and strain into a chilled cocktail glass. Serve with a lemon zest.
Street festival
On June 1st, the neighbors at the intersection of Ingmar Bergmansgata and Nybrogatan are organizing a joint street festival. It will be similar to last year’s, but this year it will be even better. Mikael Einarsson sums it up very well, “Once is none, twice is a habit, and three times is a tradition, as they say. Even though it’s the first year the three of us are doing this together, we already see it as a habit. We look forward to making this an annual tradition where we kick off the summer season with a joint square festival to which everyone is welcome!” says Mikael Einarsson. Joy Harris x Sthlmfood pop-up
Don’t miss April 12-14, you have the opportunity to buy Joy Harris’ pralines and enjoy her famous crêpe cake at our sister restaurant La Petite Soeur. Our colleague Joy Harris holds a Diplôme de Pâtisserie from the famous school Le Cordon Bleu in London. She is also our pastry chef and has been part of our team since we opened in October 2022. Signature dish:
Cordon Bleu
The classic Kalvbrässen or Cordon Bleu has been on the menu since opening in November 2022. It has earned its place as one of our signature dishes as it is loved by guests and staff. That this dish would get a place on the menu was not an of course, Micke tells us more about the days before opening.
“In fact, this dish was one of the last to be on the menu before the opening of Chez Jolie. We sampled veal brisket in different varieties and with different sides. We actually wanted to include an interpretation of Schnitzel Cordon bleu. The idea was born to instead combine these two dishes into one, Veal brisket Cordon Bleu. As time was running short and we didn’t know if the idea would work in practice with an “assembled” and breaded veal brisket schnitzel filled with Gruèere cheese and ham, but we managed and it actually turned out better than we had dared to hope for. It has been one of our most popular dishes since opening and will hopefully be around for a long time to come as a signature dish to be proud of.” – Micke
